Whats Cooking?

Ok so for like the last week I have been dying to try a new recipe, chicken gyros with a tzatziki sauce. Well I finally made then yesterday and YUCK!!! I didn't finish mine and I threw the extras away- it definitely was not what I was thinking it was going to be..... so I made up for it by making these delicious little things:



Peanut Butter Chocolate Heaven Cookies

1¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, softened (I used salted butter and cut the 1/4 teaspoon salt down to 1/8 teaspoon)
1 cup peanut butter at room temperature
¾ cup plus 1 tablespoon (for sprinkling) sugar
½ cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
1 teaspoon vanilla extract
½ cup peanut butter chips
½ cup chocolate chipsPreheat oven to 350 degrees.

In a large bowl, combine the flour, the baking soda, the baking powder, and the salt. Set aside.

In a large bowl, beat the butter and the peanut butter together until fluffy. Add the sugars and beat until smooth. Add the egg and mix well. Add the milk and the vanilla extract. Add the flour mixture and beat thoroughly. Stir in the peanut butter chips. Place sprinkling sugar on a plate. Drop by rounded teaspoonfuls into the sugar, then onto ungreased cookie sheets, leaving several inches between for expansion. Using a fork, lightly indent with a crissscross pattern but do not overly flatten cookies. Bake for 10 to 12 minutes Do not overbake. Cookies may appear to be underdone, but they are not.

Cool the cookies on the sheets for 1 minute, then remove to a rack to cool completely.

Lately

So we are all moved in to our new., but temporary house. We are renting a house in Herriman while we find something to buy or build. We are LOVING all of the space that a this house has to offer, it is so much better than our town house (don't get me wrong I loved the town house) space just feels nice! And a garage is as luxurious as at seems:)

McCoy had his 2nd last Sunday, and I can't believe that my baby is getting to be so big! His crib is history, and he is doing pretty good with the big boy bed. Potty training is slowly becoming an interest but he is getting the idea. WOW- I am so lucky to have him! He is a climbing, throwing, independent, jumping, active, and crazy toddler but I am loving the adventure! He is 100% boy and 100% ALL OVER THE PLACE! It will be interesting to see how I juggle him with a new born thrown into the mix.

2 year old stats:
29 Lbs (about 50%)
38.5 inches tall (off the charts, above 100%)

I finally bought a double stroller, I have been searching for something that is compact and that will fit in my trunk along with groceries and I finally decided on this
